Hummus : Courtesy of

My love for Hummus has grown lately stemming from the Lebanese stall on the Dun Laoghaire food market on Sundays. So today, as result of having hummus while out to dinner last Tuesday, I wanted to make some myself.  I stumbled across the following recipe whilst browsing ( <-- Amazing site for recipes, its an online cook book generated from other blogs with pictures)


  • 1 16 oz. can of chickpeas (garbanzo beans)
  • 1/4 cup liquid from can of chickpeas
  • 4 Tbsp. lemon juice
  • 1 1/2 Tbsp. Tahini
  • 2 cloves garlic, crushed
  • 1/2 tsp. salt
  • 2 Tbsp. olive oil
1) Drain and reserve 1/4 cup of liquid from can of chickpeas. In a food processor, combine chickpeas, tahini, lemon juice, crushed garlic, salt and olive oil. Process until well mixed. Add liquid from chickpeas. Blend until smooth.
2) Serve in a bowl as is, or drizzle olive oil on the top, and garnish with olives.
