Dutch Apple Pie
I made this for Sunday lunch today, it went down very well indeed :)
300g Self Raising flour
200g margarine (cold)
160g Caster sugar
2 Teasp of Vanille Extract
1 Beaten egg
Pinch of salt
1 kg Cooking Apples ( Bramley Apples)
The juice of 1 lemon
15g Dark muscovado sugar
2 tsp cinnamon ground
Cut with 2 knifes the margarine through the flour and sugar. Once your flour, margarine, and sugar resemble breadcrumbs, start to bind the pastry with your fingers.
Add 3/4 of the egg and make a dough. Then refrigerate for 1 hour.
Peel the apples, and cut in little pieces of 0,5 inch. Add lemon juice so they won't go brown.
Add sugar and cinnamon and the raisins. Stir.
Roll out the dough on a floured surface and make a bottom (round) and the sides of the pie and put it in a spring form tin. Add the apples.
Bake it for 60 minutes on 350ºF/180C.
Take it out and let it cool for 5-10 minutes before releasing from the pan.
Serve with some whipped cream,
