Cake baking day again down in Limerick, 3rd week running now. I only really decided to make something late tonight, there were strawberries in the fridge so I went searching for a strawberry related cake on Tastespotting.com( I love that site its the best recipe book on the web in my opinion check it out). I stumbled upon this recipe below courtesy of http://whiskwriterepeat.blogspot.com.
160 gr of Margarine, softened
340 gr of Self raising flour
Pinch of salt
226 gr Caster sugar
1 egg (beaten)
113 ml of milk
1 teasp Vanilla extract
Punnet of strawberries(hulled and halved)
4 Dessertspoons of golden caster sugar
1)Preheat the oven to 180c degrees.
2)Butter a pie plate or cake pan. My pie plate was 9-inches.
3)Sift together the flour, baking powder and salt in a bowl.
4)In a separate bowl, use an electric mixer to beat the margarine and sugar. Mix until pale and fluffy, about 3 minutes. Add in egg, milk and vanilla, and mix. Gradually sieve in the flour mixture.
5)Transfer the mix to your pie plate or cake pan. Arrange the strawberries as close as you can get them on the top, placing the cut sides down. Sprinkle evenly with4 dessertspoons of golden caster sugar.
6)Bake 10 minutes, then reduce heat to 170c degrees and bake about an hour longer, until it's firm and golden.
