Carrot, Orange and Cumin Bread

Playing around with my flavour thesarus tonight and knowing I had a big ol bag of carrots in the fridge I decided to come up with this little recipe using Oonagh from the Great Irish Bake Off's banana bread as my basis. The flavour thesaurus told me that cumin works well with carrot and orange so I went with it. It produced a wonderfully fluffy sponge with fantastic flavour. I hope you make this as its delicious with some tea smothered in butter and nice alternative to banana.


75g very soft butter 
280g carrots skinned and finely grated
200g light muscovado sugar
1 egg, beaten
1 tsp vanilla extract
1/2 tablespoon of orange zest finely grated
3/4 tsp of cumin1 tsp bread soda
170g spelt flour


  1. Preheat oven to 170c/160c fan/325f/gas mark 3. Grease a 2lb baking tin with butter and flour.
  2. Mix carrots, orange zest, butter, egg , sugar and vanilla with an electric whisk.
  3. Sieve the flour with bread soda and cumin, add to the above batter and whisk for 1 minute until fully incorporated.
  4. Pour in to the tin and bake for about 50 minutes or until a metal skewer comes out cleanly.
  5. Remove from the oven, allow to cool on a wire rack before serving.
