The man behind the belly welcomes you to this blog,
The man in question is me Willem De Korte, I do however generally go by Will these days, it's easier than trying to explain my name is spelt with an "em" rather than "iam". The name comes from my dad who is from the Netherlands, so I have got foreign blood in me. I am originally from Limerick but live and work in Dublin for a law firm. My hobby however is all things food and this blog is my outlet to the world. I started this with the encouragement of my Fiancee Joanne back in November 2010. We would eat out alot so she thought it would be a good idea to review places we went in order to inform and help others. I also wanted to have an outlet for a my cooking, I originally trained as a chef 12 years ago and even completed the first year of a professional cookery course in the Limerick Institute of Technology. However 1 year in despite doing well I didn't think the life of a chef was for me and decided to take up Information Technology. I guess for me all I wanted to do since a child was to emulate my father and bake, as he has been a master baker for 48 years. Although I soon realized working as a chef is incredibly tough, you work very long hours and have no social life, and being only 17 years of age I opted out of something I had always wanted to to do. Thinking back I wish I was slightly older going in to a kitchen and not as overweight .
Speaking of overweight , I spent most of my life overweight where I ballooned each year until I was made redundant from my job in Dell Limerick in February 2009. I weighed in at a whopping 25st 8lbs, my goal was to take my redundancy and use it to my advantage to lose some weight. Between February - September 2009 I went from 25st 8lbs down to 14st 7lbs. It took two things diet and walking, that's all I did for 8 months was eat healthy as well as going to the gym twice a day 7 days week. I am now fairly healthy and kept the weight off, I could do with losing a few pounds due to baking non stop. Yup baking that's all I seem to do these days from bread to sponges all I want to do is bake. I adore baking and I love seeing the smile on people's faces when they eat my stuff, there is nothing better than being complemented on your baking.
